I impressed myself with this tarte aux pommes. I don't have a great talent for baking but this might just be the best apple pie I have ever had.

Tarte aux pommes
250 ml flour
1,5 tablespoons sugar
125 g butter, straight from the fridge
100 ml almonds
75 g butter at room temperature
75 ml sugar
1 tablespoon vanilla extract
50 ml cream
c. 2 apples, thinly sliced
To make the pie crust mix the flour, sugar and butter (add a little bit at the time) in a food processor or with your fingers. Flatten the pie dough on the bottom of a baking tray and place in the fridge for 20-30 minutes.
To make the filling mix all ingredients, except for the apples, in a food processor, adding one thing at the time starting with the almonds.
Take the pie crust out of the fridge, make small puncture holes with a fork. Place in the oven at 200 degrees Celsius for 10-15 minutes.
Spread the filling on top.
Add apple slices.
Bake in the oven for an additional 35 minutes or so.
