This recipe is adapted from Martha Stewart.
4 poblanos, cut lengthwise and de-seeded
1 can (c. 400 g) of black beans, drained
1 Hot Yellow chili, or any other kind of chili you have at hand, chopped
2 cloves of garlic, crushed
0.5 red onion, chopped
6 tomatoes, chopped
A couple of handfuls of grated cheese
(salt & pepper)
Mix all the ingredients except for the poblanos and the cheese in a bowl.
Place the poblanos in a greased oven proof dish.
Stuff the poblanos with the bean mix. If you have more than you can fit, just place it on the bottom of the dish.
Roast in the oven at 220 degrees Celsius for about 30 minutes.
Add the cheese and place back in the oven for another 10 minutes.
